Peanut Butter and Honey Biscuit with Peanut Glaze

Peanut butter is another ingredient that I don't often bake with. Do you? It really worked wonderfully in these little biscuits. The biscuit itself is simple with a slight hint of peanut butter. What really sets them off is the sweet glaze and the studs of roasted peanuts.

Ingredients for Biscuit
1 1/2 cup plain flour
1/2 self raising flour
1 cup rolled (porridge) quick oats
125g unsalted butter
1/2 cup caster sugar
1/3 cup honey
2 tbsp crunchy peanut butter

Ingredients for Glaze Topping
3/4 cup icing sugar
25 unsalted butter, melted
1 tbsp water
1 cup roasted unsalted peanuts, finely chopped

Method
Preheat the oven to 180 degrees (fan-forced) and line 2 baking trays.  Sift the flours into a bowl and stir in the oats; set aside.  In a saucepan, combine the butter, sugar, honey and peanut butter and stir over medium heat until melted together.  Add this to the flour and oat mixture; stir until combined.  Roll heaped tablespoons of mixture into balls.  Arrange on prepared trays and press lightly to flatten.  Bake for 10 minutes.  Cool on trays.  To make the topping, combine icing sugar, butter, and water in a bowl.  Stir until smooth.  Dip top of cookies in glaze topping and then dip them into the finely chopped nuts.  Let glaze and nuts set; then serve.

  2. There is probably only one food in this world that I do not like and that is peanut butter. I have never tried it in cooking simply because I do not like it, but I would be interested in trying these biscuits never the less. Diane

  11. I love peanut butter but I find that if I bake too much with it, it puts me off. Every once in a while though, I have to make something with it. I bet the honey combination went over well!

  17. I don't bake with peanut butter either, as it is not one of my favourites! But I did bought a bottle two months ago to bake something and it is still "sitting" in my pantry! The cookies with the glaze look very good!

  28. I should bake with peanut butter a lot more often. When I do, I am happy about it. I use several of the nut butters, almond and cashew. I have to start making my own.

  30. I do like to use PB but only in small quantity in order not to over power the dessert. Your recipe indicates the perfect amount for me to consider the recipe ;o)
    I did the same in reducing the PB in my last Chocolate frozen pie...remember ;o)

  43. oats and peanut butter--this is practically a health food! i find that i don't use peanut butter very much in baking either, and more often than not, chocolate is involved as well. i like how the protein-packer gets center stage here!
