I recently acquired Nigella's cookbook "How to be a Domestic Goddess" and the first recipe I made from there was the Maderia Cake. I was short on time, so decided to bake this simple but tasty recipe as muffins. Nigella believes this is the sort of plain cake recipe you can't see the point of...until you start slicing and eating it.
Ingredients
240g softened unsalted butter
200g caster sugar, plus extra for sprinkling
grated zest and juice of 1 lemon
3 large eggs
210g self-raising flour
90g plain flour
Method
Preheat the oven to 170 degrees (fan-forced) and prepare a 24 muffin tray. Cream the butter and sugar, and add the lemon zest. Add the eggs one at a time with a tablespoon of flour for each. Then gently mix in the rest of the flour, and finally, the lemon juice. Sprinkle with caster sugar (about 2 tbsp should do it) as it goes into the oven, and bake for 1 hour or until a cake-tester comes out clean.

Ooh I've missed this recipe! I do love madeira cake though, it was one of my favourite cakes as a child :)

ReplyDeleteI got to stay 2 weeks in Paris with friends who were in charge of study abroad for BYU. They lived 2 blocks from the Eiffel tower and we lived in a beautiful flat that was so typical. Right across the street was a little grocery store. Her kitchen was probably 8x10 with only a little table for 2 shoved against the wall and maybe 3 feet of counter space but we had such fun cooking in it and going to the store across the street to see what inspired us for dinner that night. One night she sent my husband out 3 times, but it was not much more than running to the basement. How fun! Hope you realize your dream to live there someday.

ReplyDeleteYou asked about those cups..yes, i bought it at the local baking supplies store. I think it's quite common though I'm not sure if they have them in Australia though. If you can't find them, let me know and i can mail some over to you.
