The Festive Season: Rum Balls

We all know it's coming up to Christmas, so why not try this recipe to impress your family and friends during this festive season? Everyone loves rum balls and they are great as little gift idea.


Ingredients
250g Milk Arrowroot [Arnott's brand] biscuits (or use Arnott's Nice biscuits if you want it sweeter
3 tablespoons cocoa powder
1/2 cup desiccated coconut + coconut for coating (allow for 3/4 cup)
395g can of sweetened condensed milk
1/2 teaspoon vanilla essence/vanilla extract
2 tablespoons rum
2/3 cup sultanas (or you can use mixed fruit)

Method
Finely crush the biscuits in a food processor (or blender) along with the cocoa. For those who used the blender: pour the crushed biscuits and cocoa mixture into a mixing bowl and add the remaining ingredients (except for the coconut coating). Mix the ingredients together. If you used a food processor, simply add the 1/2 coocnut, condensed milk, vanilla and rum to the mixture and process until it is well combined. Add sultanas and process on a low speed until just combined. Place mixture in your fridge (or freezer to speed up the process) for about 30 minutes or until you think it firm enough to roll into balls.
Note: Do not omit this step - the rum balls need to be firm in order to be rolled, otherwise they will not hold their shape nicely! Meanwhile, take a plate or flat board and sprinkle coconut for coating onto it. Take the mixture from the fridge and take a spoonful of the mixture and roll it into balls. Then rolls the balls in the coconut on the plate. Store in an airtight container in the refrigerator.
